We’re so excited to be in your inbox, and back in your kitchens. We’re writing to share a little more about how the new One Potato community and recipes are going to work. Remember, since we’re no longer shipping you a box of pre-portioned and prepped ingredients, there may be slightly more prep work involved. The good news? This means that you have more control over the quantities, freshness, and flavors. We’ll be sending you lots of recommendations for pre-made options (if you want to save time in the kitchen) and tips & tricks for time-saving hacks, pre-batching ingredients/sauces, and plan-ahead extra portions to use for leftover meals.
In every weekly recipe, you’ll see the following sections you can jump to directly, to modify the recipe to your family’s preferences:

We’re embarking on this new phase of One Potato with you - and we’ve already heard from many of you about your family cooking and meal prep preferences.
Thanks to all of you who took the survey - your meaty feedback was great. Now that we know you better – and the way your families shop, prep and cook – we'll be refining One Potato further. If you haven't had a chance to take the survey yet, there’s still time!
We’ve already learned A LOT:
Like you, we know that evening hours after work and school are precious, and having quickly and easily prepared meals can make a big difference. And thank you to all the leftover lovers out there. We hear you and we’ll give you ideas that will convert ordinary leftovers into something more special.
From your feedback, we also learned that the weekends are when most of our One Potato families have family meals together. For this reason, we’ll be sending you a delicious One Potato recipe with shoppable grocery list on Thursdays. This will give you time to purchase any ingredients or plan any kitchen meal prep for your weekend family meal. Of course, feel free to plan to cook your One Potato weekly recipe whenever works for you and your family.
As we grow together, we’re sure to continue to expand and refine our offering together!
But wait… There’s more!
We promised to simplify grocery shopping. With each recipe, you’ll receive a link to an InstaCart shopping cart with pre-filled ingredients for that recipe (use their app or shop online). All you have to do is
Verify your location
Choose your preferred store and delivery service
Confirm the items and quantities that you want to purchase
Check out and schedule your delivery
Important note: We might include two options for similar items in the cart because we have readers who prefer organic over conventional products or vice versa (or we might include a low-sodium option, for example). Be sure to remove duplicates before checking out – if a recipe only calls for a total of five items, make sure you don’t have six items in your cart. That means you have a duplicate!
If you want to shop IRL, we’ll also be sending you a PDF to print out or copy/paste into your notes app to save on your phone and reference while at the store.
To get you started in the kitchen, and give you a chance to test out ordering groceries from a link in our One Potato newsletter, we created a shopping list of pantry & refrigerated staples for you.

This week, you can even use this printable shopping list to do a pantry-check as an activity with your kids, to do a kitchen scavenger hunt and see if you happen to have all these pantry staples already.
