The 4th of July is one of those days with a lot of waiting built into it. Waiting for the grill, waiting for the parade, waiting for it to get dark enough for fireworks. Somewhere in that stretch, kids get restless and the kitchen gets hot.
Hereās a small thing to do in that gap. You put cream, a little sugar, and vanilla in a bag, drop it into a bigger bag of ice and salt, and shake. A few minutes later the liquid is ice cream (OK, sometimes a lot of minutes laterā¦). No machine, no churning, no oven ā just a bag, some ice, and hands that get a little cold.
Itās also a real science moment hiding inside a snack. Kids get to watch a liquid turn solid in their hands and feel why the salt matters. You can make it red, white, and blue if you want by adding strawberries, blueberries, or some drops of food coloring for festive holiday colors, or leave it plain. Either way, you end up with something to eat.

Tools Youāll Need:
1 small zip-top bag (sandwich size) ā this holds the cream
1 large zip-top bag (gallon size) ā this holds the ice
Measuring cups and spoons
A clean kitchen towel or oven mitts (the bag gets cold to hold)
Ingredients:
½ c. half-and-half, whole milk, or heavy cream ā whatever you have
1 Tbsp sugar
¼ tsp vanilla
About 3 cups ice
ā c. salt (table salt or rock salt both work)
Optional: a few berries to stir in, or a drop of food coloring if you want to go red, white, and blue.
Learning Goals
Kids see a liquid become a solid right in front of them, which usually feels a little like magic until they do it themselves. The salt is the surprising part: ice on its own isnāt quite cold enough to freeze the cream, but salt mixed into the ice makes it even colder, so the cream firms up. Kids can feel the outside bag go from cold to really cold, and they can taste the difference between still-soupy and scoopable.
Thereās nothing to get right here. Even noticing one thing ā that the bag got colder after the salt went in, or that the cream got thicker the longer you shook it ā is the whole point. Itās science, but it tastes like dessert.
Age Modifications
Younger Kids (PreschoolāK):
Let them do the shaking and the feeling ā cold, colder, thick, frozen
Help them spot the moment the liquid stops sloshing
Skip the measuring; just let them pour what you hand them
Middle Grade (Elementary):
Let them measure the cream, sugar, and salt themselves
Have them guess how many minutes of shaking itāll take, then check
Compare the consistency of the bag before and after the salt goes in
Older Kids (Upper ElementaryāMiddle):
Try making two bags side by side: one with salt in the ice, one without. Which one freezes? (The plain-ice bag usually wonāt.)
Time how long the shaking takes and write it down
Ask them to explain, in their own words, why the salt makes the ice colder
Parent Notes
This one is messy in a good way: cold hands, a little salt water on the counter, maybe a bag that wasnāt sealed all the way. None of it ruins the activity. If you want fewer moving parts, use one bag and skip the side-by-side salt test. And if a kid loses interest halfway through the shaking, thatās fine too ā you can finish it for them and still have the taste-test conversation.
If you only do one thing: right after you add the salt, have everyone touch the bag and say whether it feels colder. That one moment is the whole science lesson, and it takes about ten seconds.

Activity Flow
Mix the cream. In the small bag, add the cream, sugar, and vanilla. Push the air out and seal it well. Ask: āWhat do you think will happen to this when it gets really cold?ā
Build the ice bag. Fill the large bag with ice, then add the salt right on top. Before you seal it, have kids feel the bag ā cold, but fine to hold.
Tuck the cream bag inside. Nestle the sealed cream bag down into the ice, then seal the big bag.
Shake. Wrap the bag in a towel and shake, squish, and toss it for about 5ā10 minutes. Trade off when arms get tired ā this is a good team job.
Check it. Open the big bag and feel the cream bag. Still liquid? Getting thick? If itās still soupy, seal it back up and shake a little longer.
Feel the difference. Have kids touch the outside of the big bag now. Ask: āIs it colder than before we added the salt?ā That extra cold is what freezes the cream.
Scoop and taste. Open the small bag, scoop into cups, and add berries on top if you want. Talk about what changed from when you started.
