Are you expecting breakfast in bed (and the need for a clean-up crew in the kitchen?) Or are you overachieving by having your family over for Mother’s Day Brunch? We have been greeted with a variety of amusing breakfasts over the years, some of which were IG worthy and others we’d rather not discuss. We are sharing one of our quick and easy (and crowd-pleasing) recipes for a great dish that can be whipped up effortlessly by an adult or child, with minimal mess. It also has the added benefit of preparing in advance, so no one is scrambling in the morning.
Coconut Chia Breakfast Pudding (good for snacks or dessert too!) calls for just three basic ingredients - all pantry staples! Jazzing up the presentation or customizing individual portions is easy too - you can use fresh berries, granola or chocolate chips. The chia pudding can be layered with fruit in a glass cup or jar for a “parfait” look too! We like it because kids can add their personal touch by decorating the tops.

Coconut Chia Breakfast Pudding
For 4 Servings of Breakfast Pudding
1/3 cup whole chia seeds
2 cups (1 15-ounce can) coconut milk (unsweetened)
2 tablespoons honey
Toppings:
Mixed Berries
Other fruit: Mango, Kiwi, Banana
Granola
Shredded Coconut
Chocolate Chips
Directions:
Place all of the ingredients in a bowl and whisk to combine.
Divide between 4 jars or bowls.
Refrigerate 1-2 hours or overnight.
Add desired toppings and serve.
Substitutions and Dietary Considerations
Coconut-Free: Substitute any kind of “milk” - you can use almond milk or oat milk beverages, or even regular dairy milk. This recipe calls for a can of unsweetened coconut milk as a non-dairy alternative, but there are lots of options out there. This is a great opportunity to use whichever option your family prefers!
Low or No Sugar: Feel free to omit the honey in this recipe. Depending on the type of milk/liquid and toppings that you use, the pudding can be plenty sweet. Unsweetened coconut milk might be rather unsweet, but if you do substitute a different non-dairy beverage, you might have enough sweetness.
Getting Kids Involved
Let your kids pick their favorite toppings - this recipe allows for flexibility.
Kids can help measure, divide into servings, and assemble the pudding bowls for a very simple and mess-free way to make and serve Mother’s Day breakfast.
Pro Tips
The magic happens in just a few hours, so don't worry when you’re mixing the ingredients and it looks very soupy - it will thicken to a pudding consistency.
Combine the ingredients the night before so that the pudding is ready for super easy assembling and serving Mother’s Day morning.
