One Potato Lemon Vinaigrette

We love keeping this vinaigrette on hand to use on salads, grains, and as a marinade.

There are so many reasons why we love to make our own lemon vinaigrette, one of which is versatility - it complements almost everything! And during the hot summer weather, having a jar on hand to brighten up everything from salads to grain bowls to using as a mustard-lemon marinade for grilled meat or veggies.  We’re sure you’ll love it, too. 

This lemon vinaigrette can be mixed together in minutes, with ingredients we’re sure you have in your pantry (be sure to stock up using our One Potato Pantry List!). You can combine these ingredients to your family’s taste preferences - if you like a mustard-forward flavor, feel free to add an extra tablespoon of dijon; if the vinaigrette is a bit too lemon-y for you, drizzle in more olive oil as you whisk it together. Adding in finely chopped shallots and some herbs can elevate this vinaigrette even further, but these are completely optional.

To make approximately 1 cup of vinaigrette

Tools: jar or mixing bowl, citrus juicer
