Our One Potato Red Wine Vinaigrette is a versatile and vibrant dressing that transforms even the simplest salads into gourmet experiences. This vinaigrette is a blend of three types of vinegar, shallots, and sugar to create a tangy, sweet, and savory flavor profile. The bold acidity of red wine vinegar forms the foundation of this dressing, and we use Champagne vinegar since it’s not as strongly flavored or acidic as white wine vinegar. (If you don't have Champagne vinegar in your pantry, rice wine vinegar is a fine substitute.) In this recipe, we use a small amount of sugar dissolved in the balsamic vinegar to balance the acidity.

One Potato Red Wine Vinaigrette

To make approximately 3/4 cup of vinaigrette

Tools: Small saucepan, jar or mixing bowl, whisk, chef’s knife, cutting board
