We’re bringing you One Potato’s version of ‘special sauce’ - it’s not ketchup, and it’s not simply adding a spoonful of mayo to that burger or sandwich. You will see a lot of restaurants with their own version of ‘special sauce’ on the menu; it’s close in flavor profile to Russian and Thousand Island Dressing, and essentially a tartar sauce. One Potato’s version combines mayonnaise with lemon juice, capers, cornichons, shallots, and some fresh herbs for a tangy, well-balanced creamy special sauce.
The best part about making your own homemade version? You can taste as you make it, so you can give it the balance of tangy-sweet-creamy mayo flavors as you like. For those who are dairy-free or vegan, you can easily substitute vegan mayonnaise as the base of this sauce recipe. Enjoy!
