One Potato Yuzu Ginger Vinaigrette
Here at One Potato, we are big fans of the crisp, zesty flavor of yuzu - a small and aromatic citrus fruit that feature in East Asian dishes. It has a complex flavor that can be described as a blend of grapefruit, lemon, and mandarin orange. Pro Tip: When adding citrus zest or peel to a recipe, we recommend using organic citrus to avoid excessive pesticides on the fruit. If you can't find organic at your store, soak whole oranges and lemons in a baking soda solution (1 teaspoon of baking soda to 2 cups of water) for 15 minutes.
Making a vinaigrette is as easy as remembering a simple ratio: 3 parts oil to 1 part acid (like vinegar or lemon juice). This balance gives you a smooth, well-rounded dressing that’s not too tart and not too oily. Start with this basic ratio, then taste and adjust to suit your family’s preferences— a dash of mustard will help with emulsification, and always salt to taste. In this vinaigrette, we complement the olive oil and citrus juices (yuzu and lemon) with tamari.
