On the day after Thanksgiving—you’re tired, the fridge is packed with leftovers, and the last thing that you want to do is to cook from scratch. Let’s get creative but keep it easy with these personalized turkey pot pies! They’re a cozy way to make the most of your holiday feast, combining tender turkey, leftover veggies, and gravy for a velvety filling topped with a golden crust. If you’re a vegetarian, use your leftover vegetarian gravy and veggies as the filling.
Not a fan of Turkey Pot Pies, or don’t want to bother with pie crust? Have a ton of mashed potatoes you’d like to use up? It’s super easy to follow this leftover turkey pot pie recipe, and instead of topping with a golden crust, you’ll top with mashed potatoes.
These pot pies are all about big flavors with little effort, and they’re perfect for everyone to enjoy their own little pie. Simple, delicious, and a fun twist on classic comfort food—dig in and enjoy!
Gather Leftovers & Ready-Made Crust:
Simply gather up those leftover roasted veggies, leftover turkey, and mashed potatoes you already have in the fridge. You can even try adding stuffing or roasted sweet potatoes for extra holiday flavors in your pot pie filling.
Use any leftover pie dough, pick up a pre-made pie crust or savory pie dough from the store, and keep it in the fridge until you’re ready to assemble your pot pies.
Pro Tip: If you have leftover pre-made dough already in a pie tray, simply remove it, flatten, and roll it out and cut into the desired size and shape of your pot pies. You can combine two crusts and roll them together.
