Greek Nachos with Carrot Ginger Soup
It's a global cuisine mash-up, and you're going to love it. Keeping it light and delicious during the hot summer weather, serve this carrot soup hot or cold.
There are so many textures and flavors in this dish that it is difficult not to find something to love. Savory, crunchy baked pita chips make a perfect accompaniment to the fresh veggies and tangy, smooth tzatziki (low-fat Greek yogurt based dipping sauce). You can even serve this dish “deconstructed” for the less adventurous eaters in your crowd.

Meal Prep & Time Savers
Buy your favorite carrot soup from the store. You can doctor this up yourself by warming over a medium flame, and adding ingredients to taste. Have your kids taste-test and give you tips on what to add. Some complementary flavors include:
minced ginger
minced garlic
splash of orange juice (to bring out the sweetness in the carrot)
drop of hot sauce to bring together the sweetness of the carrot flavor, the ginger, and the garlic
A note on quantities: The Greek Nachos are piled high with fresh veggies, so it’s very easy to double the quantities for an extra meal or add more of a specific vegetable (if your family members are tomato lovers, or cucumber-haters, for example. We recently met an adult who doesn’t eat cucumbers! You do you!).
Save time by using a store-bought salad dressing. We recommend this Meyer Lemon, Olive Oil & Garlic Vinaigrette or Brianna's French Vinaigrette.
Make extra or make ahead:
Our homemade Lemon Vinaigrette is so incredibly versatile, it goes great not only on veggies but also on grains. Cook up some quinoa and toss with our Lemon Vinaigrette, chop extra veggies when you’re making your nachos for dinner, then grab some fresh lettuce or mixed greens to make a filling salad for lunch or dinner the following day.
