To prep ahead, you can completely submerge the shredded potatoes in cold water, and store the mixture in an airtight container in the fridge for up to 24 hours, squeezing out excess liquid just before mixing.
Rotisserie Chicken Shortcut: Save time by using a store-bought rotisserie chicken for the soup instead of cooking a whole chicken from scratch.
