One Potato Latin BBQ Sauce
To make a jar
Tools: Blender, small sauce pan, chef’s knife, cutting board
Ingredients:
1 Can - 16 oz - Puréed Tomatoes (you can also use crushed tomatoes, since you will be blending until smooth in a blender at the end)
2 Tbsp - Vegetable Oil
½ Tbsp - Garlic, minced
1 ½ Small Onions, chopped
½ Tbsp Tomato paste
2 Tsp Packed Brown Sugar
1 Tbsp Sugar
1 Tbsp Molasses
1.5 Tsp Thyme
2 Tsp Oregano
4 Tsp Cumin
1.5 Tsp Coriander
2 Tbsp or 1 Chipotle in Adobo chopped (Note: this is 1 chipotle pepper from the can, chopped, not a full can of peppers in adobo)
2 Bay leaves
Dried Chiles (Powdered) - Purchase Trio HERE plus Pasilla here
2 Tbsp Guajillo Powder
2 Tbsp Ancho Chile Powder
½ Tsp de Arbol Powder
2 Tbsp Pasilla Powder
Reserved for the end:
2 Tbsp Packed Brown Sugar
1 Tbsp White Vinegar
Salt and Black Pepper to taste
Plus Dried Pasilla
Directions:
Heat the oil in a saucepan over medium-high heat, then add the onion and cook until softened, 3 to 4 minutes. Add the garlic until slightly softened and tomato paste and cook for 1 minute.
Add the can of puréed tomatoes and bring to a boil, stirring frequently. Reduce the heat to medium-low and simmer for 5 minutes.
Combine all the remaining ingredients - except for those reserved for the end - in the saucepan with the tomatoes.
Bring to a simmer over medium heat, add bay leaves. Stir occasionally, for approximately 10 minutes, and cook until it’s no longer super soup-y, but not quite a paste (thickness should be close to a traditional/typical BBQ sauce).
Remove from heat. Let cool for at least 10 minutes and remember to remove the bay leaves.
Add the sauce to your blender and purée until smooth
.Return all the ingredients to the saucepan, and add the final brown sugar, white vinegar, and bay leaves (again, if desired) for flavor. Taste and season with salt and pepper to your liking. Allow to cook for 5 more minutes, stirring to combine, and thickening if desired. Remove bay leaves before serving and before storing.
Use immediately or add to a bottle or container and store in the refrigerator.
Pro Tips
Store for up to two weeks in the fridge, or freeze to save for longer. Freeze in serving-size portions to unfreeze.
Always remember to put the date on your frozen food. You can store in airtight Ziploc bags, or glass storage containers and write the date on a piece of masking tape.
If you have leftover tomato paste from a can, we like to scoop the remainder out by the Tablespoon and place it on parchment paper, freezing in 1 tablespoon disks for future use. After the discs have frozen, place in a freezer Ziploc bag for storing.
