One Potato Mango Manchamantel Sauce
A special molé sauce that features our favorite trio of dried chiles, charred pineapple, and mango.
‘Molé’ literally translates to ‘sauce’ in English, and is a traditional sauce used frequently in Mexican cuisine. Manchamantel is a version with fruit, usually pineapple, adding a sweet and tangy element to the overall smoked chili flavors. One Potato’s Manchamantel sauce includes mangos in addition to the pineapple, for an extra oomph. The name of this sauce translates to “Tablecloth-stainer,” from its deep red color to diners tendency to dig in and sometimes make a mess, it’s so delicious!
If you’ve made our Latin BBQ Sauce, you know that we are a fan of this trio of dried chiles (and this is another recipe in which you get to use them!). We like this chili combination because it adds flavor without adding too much heat. Our manchamantel sauce has a slight kick from the addition of morita (chipotle) chiles, but we promise it’s not too spicy - you can let the kids drive the heat by stirring in a little at a time. A little goes a long way! Start with ½ to 1 Tsp, taste, and add a little more at a time.
