It’s only four ingredients: soy sauce, mirin, sugar, and dashi, and you might already have everything except the dashi in your pantry. You might be wondering, what exactly is dashi? Well, dashi is a traditional Japanese stock made from seaweed and bonito fish flakes. It's the secret ingredient that brings a rich, umami depth to many Japanese dishes. Think of it as the soulful, savory hug that ties all the flavors together in our dressing. This is also the base of the One Potato Teriyaki Sauce. Of course, feel free to omit the dashi or if you’re vegetarian, use a vegetarian or kombu dashi powder (made from sea kelp or shiitake mushrooms).
