As November comes to an end and the holiday rush begins, it's the perfect time to take a break from the heavier, traditional fare and enjoy something a little lighter.
Sea bass is a mild, sweet fish with a delicate, buttery flavor that makes it an excellent choice for the whole family, especially kids who may be new to seafood. Its flaky, tender texture and subtle taste aren’t too “fishy,” so it’s easy for young taste buds to enjoy, especially with simple seasonings and a light sauce - like our blistered grape tomato sauce here. Paired with quick and lightly sautéed kale and onions, plus fluffy couscous, this meal comes together in less than 40 minutes.
One Potato Kitchen Tools for this recipe: baking sheet, 2 large sauté pans, small pot, small baking dish, tongs
Meal Prep & Time Savers:
Pre-chop Vegetables: Wash and chop the kale and slice the onions the day before. Store them in airtight containers in the fridge, so they’re ready to cook when you start preparing the meal.
Use Pre-prepped Greens: Many stores sell pre-washed and chopped kale or mixed greens, which can cut down on prep time. Simply sauté them when you’re ready to serve.
Use Store-bought Canned Tomatoes: If you’re short on time, you can substitute a can of plum tomatoes - warm in a saucepan, add some dried spices, and mash to create a similar sauce in only 3-4 minutes instead of blistering tomatoes in the oven.
