With fall in full swing, we're taking inspiration from cider mills, apple orchards, and the cozy flavors of the season to elevate our chicken breasts.

How to Prepare Glaze:
Making a glaze can sound intimidating - but don’t be scared! Our recipe for Cider Glaze only takes 10 minutes to prepare, is made in a single saucepan, and is truly delicious. Combine all the ingredients, and reduce. It’s that simple!
Meal Prep:
Make the Cider Glaze Ahead: Prepare the One Potato Cider Glaze up to 2 days in advance. Store it in the fridge and reheat gently before drizzling over the chicken. This will save time when preparing the dish.
Pre-chop Vegetables: Dice the carrots and parsnips the day before and store them in airtight containers in the fridge. This will cut down on prep time during cooking.
Blanch Haricot Vert in Advance: You can blanch the haricot vert a day in advance and quickly reheat just before serving.
Time Savers:
Use Store-bought glaze: Though not very common, you can try to find store-bought apple cider glaze and taste-test to your liking. You can find Liokareas Apple Cider Glaze on Amazon, but you may want to add some dissolved brown sugar to make it slightly sweeter.
Use Pre-Cooked Rice: If you want to save time, use pre-cooked wild and brown rice or opt for quick-cooking rice blends. This will cut down the cooking time for the vegetable wild rice.
Make Extra:
Batch Cook the Rice: Cook the rice a day or two ahead and store it in the fridge. Reheat in the microwave or stovetop when ready to serve. You can always keep rice on hand for quick meals any time.
Meal Prep Containers: Portion out the veggie rice into meal prep containers for an easy base for healthy grab-and-go lunches throughout the week, simply add a protein (such as preparing extra servings of this grilled chicken, make some tofu, or even top with an egg!). You can even use it as a grain to add to salads.
Make a second or third meal: Use leftovers from this recipe for a one-pan chicken stir fry, with the rice, veggies, and haricot vert. Yum!
