Salade Niçoise, a beloved dish from the sunny city of Nice, is known for its vibrant mix of fresh ingredients like tomatoes, hard-boiled eggs, and Niçoise olives. But this versatile salad can easily transition into a winter favorite! Swap fresh tomatoes for roasted beets to bring a seasonal touch, and consider adding warm elements like poached eggs or seared salmon for extra coziness. Pair it with a crusty baguette and a warm bowl of soup (it IS National Soup Month, after all!) to transform this classic into a satisfying cold-weather meal - pair this recipe with the One Potato warm Chicken Soup or the creamy Tomato Soup. We have beets on the mind because this week’s Community Voices Special featured Babushka’s Odessa Borscht; don’t forget to read Lane Igoudin’s essay for the recipe.
Traditionally, Salade Niçoise features only tomatoes, hard-boiled eggs, Niçoise olives, and anchovies or tuna, all drizzled with olive oil. Over time, variations have introduced elements like green beans and potatoes, though purists often debate these additions. To make this salad kid-friendly, include familiar ingredients like lettuce, sliced cucumbers, or even shredded cheese. Vegetarians can enjoy the salad by substituting the fish with chickpeas or white beans, and for an extra protein boost, try adding grilled chicken, tofu, or toasted nuts.
Another great thing to remember about this salad: it’s a salad based on what was available in someone’s garden and pantry. You can keep this in mind, too, when putting this salad together. If you don’t have green beans, leave them out; if you don’t have Niçoise or Kalamata olives, black olives can work here. We want you to find inspiration in the ingredients you already have in your kitchen.
