One Potato July Cook's Calendar
Here's a preview of what's cooking this month so you can plan your meals, plus the sauces we'll be sharing, and new family activities to do in the kitchen.
Introducing our One Potato Cook’s Calendar
We are thrilled to be introducing another feature of the new One Potato - the Cook’s Calendar. You will receive one at the start of each month to reduce the stress of having to plan meals every night of the week. This is a feature that was requested by many of you. You can print out the calendar from the downloadable link and hang it on the fridge, knowing what recipes will be arriving in your inbox, and adding and moving meals depending on the type of week you are having. Let us know how you are using it and what could make it even better!
You’ve been seeing new recipes (and pre-filled grocery links for those recipes) on Thursdays. Whether you’re a “same day grocery orderer” or if you prefer to go to the store to shop the same day, you can get cooking for a great Thursday night meal. But, if you are scheduling your grocery delivery in advance, or planning to shop at the farmer’s market on the weekend, you can review the recipe and plan which day of the week you’ll be cooking that dish.
With each recipe, we’ll be giving you tips on doubling ingredients for leftovers, and how to combine into lunch or second meals that don’t taste like leftovers!
Getting Saucey
Each monthly calendar will include some of the One Potato Sauces we’ll be using that month. If you make these in large batches (sauces can easily be doubled), you can store them in the freezer, use them in other dishes, or add them to whatever you’re cooking up for a healthy boost of flavor whenever you’re short on time (instead of using store-bought).

Prep your veggies
When you read through the recipes that we’ll be sending you this month (below), we’ll provide tips for prepping and storing your ingredients when they arrive - so it’s that much easier and quicker for you to prepare the meal.
Stock up your pantry
We want to minimize food waste, and maximize using ingredients you already have and will use frequently. We created an intro post with our One Potato Pantry & Fridge Staples for you to keep stocked, which can be easily purchased at our Instacart link (or download and print the shopping list: One Potato Pantry Staples Printable Shopping List).

July 4th
Recipe: What to do with 4th of July leftovers? Turn them into a few meals! We’ll be sending you recipes to turn those turkey burger leftovers into chili or sloppy joe's; how to use corn for corn salad; and you can even use leftover grilled chicken as a substitute in our DIY Steak Salad Sandwich or use it to whip up our Our Favorite Arepas Recipe w/ Latin BBQ Sauce.
July 7th - Get Growing with Chef Lola
Prep: For your first July recipe arriving on Thursday, you can whip up a batch of the Garlic Herb Dip.
Activity: Have you ever wondered how to cultivate your own herbs for cooking? Want to start planning a garden? Introducing our segment, “Get Growing with Lola.” It’s summer so we’ll be introducing a lot of ‘how to grow’ in preparation for planting next spring.
July 11th
Recipe: Cubano Sandwiches with One Potato Garlic Herb Dip - the traditional sandwich with pulled pork, or substitute jackfruit for a vegetarian twist.
Prep: When you get this week’s groceries, prep your sweet potatoes by scrubbing them clean, peeling (if desired), and cutting into ¼” fries, or ½” wedges for thicker sweet potato fries. Store your raw sweet potatoes in an airtight container in the refrigerator.
In this recipe, you’ll receive instructions for cooking your own pulled pork in the slow cooker or Instant Pot. However, there are a handful of brands (or even your local grocery store) that make pulled pork in BBQ sauce; you can buy already cooked pulled pork to make this dish in 15 minutes (the time it takes to assemble the sandwiches and for cheese to melt!). Substitute pulled jackfruit if you’re a vegetarian.
Make Extra: If you make extra pulled pork, it will keep well in the freezer for up to 2 weeks. Add it to the vegetarian Greek Nachos (sorry, vegetarians) next week, or even use it in the Oven Baked Chimichangas. Or, add the extra pulled pork to some mac and cheese for a quick weeknight meal.
July 14th
We’re bringing you our new segment, “Order Up! Our One Potato Community Members Answer 5 Rapid Fire Questions” AND a smoothie recipe this Sunday. Stay tuned!
Prep: Make a batch of the Lemon Vinaigrette to make Thursday night’s recipe even more quickly. You can also use this delicious vinaigrette throughout the week.
July 18th
Recipe: Greek Nachos highlighted by One Potato Lemon Vinaigrette and Tzatziki, w/ Carrot Ginger Soup
A One Potato favorite, this meal is light & fresh for summer time - you can serve the Carrot Ginger Soup either hot or cold. If you didn’t yet make a batch of the Lemon Vinaigrette, you can do so now, and use it in this recipe. Prep your nacho toppings by dicing the red peppers and cucumbers, and keeping in an airtight container in the fridge.
Make ahead: Add extra mixed greens or lettuce to your shopping list, cook up a batch of rice or quinoa any night of the week, and you can have a second meal of a nice Greek salad with Lemon Vinaigrette - with or without the carrot ginger soup.
July 21st
Activity & Prep: If you haven’t yet, make a batch of our delicious One Potato Mango Manchamantel Sauce - we’ll be using this in our meal on Thursday. This is a great activity to get kids familiar with all the steps and ingredients that go into their favorite sauces, and allows them to taste the layers of different flavors that make up a sauce such as a molé. Here, they can add the chipotle chile powder to control the heat and spice level of the sauce.
This sauce uses the same trio of powdered chiles as our One Potato Latin BBQ Sauce, so if you haven’t already, purchase them here. As we promised, we won’t have you buy any ingredients that will linger in your pantry without being used. You’ll see them appear in multiple recipes.
July 25th
Recipe: Oven Baked Chimichangas w/ Mango Manchamantel Sauce - chicken or tofu
If you want to save time at the end of the month, you can use the frozen pulled pork you cooked up for the Cubano Sandwiches (or your cooked jackfruit, which also keeps well in the freezer!). We top these oven-baked chimichangas with our One Potato Mango Manchamantel Sauce, but you can always top with our One Potato Latin BBQ Sauce for a change of pace (or if you already have some stored in your fridge or freezer and ready to use!).
Make Extra: Double the ingredients for the roasted veggies and black beans that go in the chimichangas, cook up a batch of rice, add some green onion on top, and you have a delicious quick rice & beans main dish for a second meal this week.
July 28th
