During the school year, weekends are when most of our One Potato families have family meals together. Remember, new recipes will arrive in your inbox on Thursday mornings so you can order your groceries for delivery or plan your IRL shopping trip. This email outlines the upcoming recipes this month, and gives some ideas for making a second meal from leftovers or using up all the ingredients.

We like to print out the calendar so that the whole family can see for themselves the answer to the dreaded, “what’s for dinner?” question, and you can fill in the meals for the rest of the week. In this email, we also share ways to utilize leftovers or batch-cook extra ingredients to use in subsequent meals.
Getting Saucey
By creating your homemade sauce library, you can add lots of flavor to your dishes without the added sugar or other additives/preservatives in store-bought sauces. Heartier sauces, such as the Katsu Sauce, can be stored in an air-tight container in the refrigerator for up to a month; our easy Marinara Sauce can be frozen for up to 6 months.

The Benefit of a Good Prep
One Potato recipes come to you with tips for prepping and storing your ingredients anytime - so it’s that much easier and quicker for you to prepare the meal.
Here’s what’s cooking this September:
September 5th
Recipe: Turkey Katsu with Katsu Sauce, Haricot Vert Drizzled with Yuzu-Ginger Vinaigrette (Fried Jackfruit or Tofu Katsu for vegetarians)
Prep: We always keep a batch of rice ready for a weeknight meal, and you can buy haricot vert already washed and prepped.
Make Extra: Keep katsu sauce on hand as a delicious every-day dipping sauce for homemade turkey katsu (that keeps well in the freezer) or even use store-bought nuggets in this recipe. You can brush the katsu sauce on cubed tofu and bake or air fry at 400°F for a healthy snack.

Activity: Emma’s excited to share an end-of-summer popsicle recipe with us, which is a great Sunday afternoon activity! Prep: This coming week you’ll be cooking up some delicious bucatini with easy marinara sauce and herb-whipped ricotta. The weeknight pasta dish comes together super quickly if you’ve already made your homemade marinara - so get a head start on that today! The One Potato Easy Marinara recipe is here, and you can make our yummy Balsamic Fig Vinaigrette to accompany it.
September 12th
Recipe: Bucatini with Easy Marinara and Herb-Whipped Ricotta, with Balsamic Fig Vinaigrette
When you have homemade marinara sauce on hand, a healthy weeknight pasta dinner is a breeze. It only takes a few minutes to create the flavorful herb-whipped ricotta, and you can use it in multiple ways!
Make Extra: Marinara sauce can be stored in the freezer for up to 4 months, whether you want to recreate this exact dish or throw together a quick pasta with marinara sauce any night of the week. Make extra herb-whipped ricotta to use on toast as an appetizer for dinner the next day, or if your kids are a fan even include in their lunches or as an afterschool snack. The balsamic fig vinaigrette makes a nice dressing for a fresh mozzarella and tomato salad.
September 15th
Emma Frisch and her Substack Time for Dins brings us healthy after-school snack inspiration!
Weekend Activity: Involve your kids in creating their after-school snack packs, inspired by Emma’s recommendations! You can get a head start by revisiting our round-up post where we shared the results of our back-to school survey with healthy snack suggestions, and keep an eye out for Emma’s tips arriving in your inbox on this date.
Prep: Make a batch of One Potato Salsa Verde and Curtido Slaw in advance of this week’s recipe - pupusas! Both the Salsa Verde and Curtido Slaw benefit from marinating for a few days, letting the flavors deepen after combining ingredients.
September 19th
Recipe: Vegetarian Pupusas with Salsa Verde and Curtido Slaw
Prep: This week’s dinner features a lot of toppings. We know how busy we all are - it’s fine to purchase pre-made guacamole, pico de gallo, and salsa verde from the grocery store or your local Latin market.
Make Extra: Double the recipe, and keep a batch of pupusas in the freezer for up to four months. That way, you can defrost for a healthy weeknight meal any time, and add any toppings that you like. Whenever you make a batch of seasoned black beans, have rice and beans for a delicious lunch or dinner the next day.
September 22nd - Get Growing with Chef Lola
It’s getting a bit grim outside, shorter days and colder weather, but it’s a perfect time to plant an indoor lettuce garden (or if you have a balcony or convenient outdoor space that you can use as an indoor/outdoor transitional area to keep the plants warm at night, you can do that, too). Chef Lola will be popping into your inbox to share more tips for growing your fall/winter garden!
September 26th
Recipe: Beef & Broccoli Stir Fry or Veggie Stir Fry, with our special Steak Marinade and One Potato Stir Fry Sauce
Prep: You can easily make ahead the stir fry sauce to prepare your week night dinners even more quickly - it will keep for up to two weeks in the fridge, and you can freeze it for up to 3 months.
Make Extra: Use leftover beef or make extra to assemble Asian-inspired tacos. Set out a taco bar with your leftover beef, warm corn tortillas, sliced purple cabbage, avocado, and any sauces (sriracha mayo is a winner here!). Or you can heap extras onto a baked potato or sweet potato for a nice healthy twist.
September 29th
